chef buck here and today we're gonna cook up a little blackened fish this is a simple and easy recipe definitely not rocket science i'm using an 8oz cut of mahi mahi and cutting it in half so you'll have 2, 4oz portions
list of spices, first thing you'll do is season up both sides if this was a traditional blackened fish recipe we'd dredge it in butter first, but we're gonna be healthy and skip that step season the fish with salt, pepper, ginger
some chili powder, paprika ...whatever the hell you like you can mix spices together before hand and have your own personal spice rub sprinkle it on there...no muss no fuss once your fish is coated heat a skillet on medium-high heat and add a littlebutter add a little oil to the butter to keep it from burning once the oil is heated, add the fish to the skillet you want the skillet hot so the fish starts cooking right away cooking time will vary on the size of the fish, but for these small pieces i'll cook 2 minutes on each side
fish cooks quickly, so be careful not to overcook if the fish starts to flake in the pan, it's cooked too much! you don't want fish to overcook and be too dry
remove fish from the heat just before you think it's done 'cause it will continue to cook even after it is off the heat try this recipe with mahi mahi, catfish, redfish...whatever the hell you like give this recipe a try and let me know what you think, and bon apetit!
